Sweet Strawberry Valentine Cake (Print Version)

# Ingredients:

→ Wet Ingredients

01 - 1 cup soft butter, unsalted
02 - 1 3/4 cups white sugar
03 - 4 large eggs at room temp
04 - 2 teaspoons pure vanilla
05 - 1/2 cup milk at room temp

→ Dry Ingredients

06 - 2 1/2 cups sifted plain flour
07 - 1 1/2 teaspoons baking powder
08 - 1/2 teaspoon table salt

→ Fruit and Topping

09 - 1 1/2 cups chopped fresh strawberries with tops removed
10 - Icing sugar for sprinkling

# Instructions:

01 - Beat the butter with sugar till light and fluffy. Drop in eggs one by one, mixing after each addition. Add the vanilla and stir.
02 - In another bowl, mix all dry stuff together. Add to the butter mix bit by bit, switching with milk pours, starting and finishing with the dry mix.
03 - Slowly fold your chopped strawberries into the mix without mashing them.
04 - Dump into a buttered and floured bread tin. Cook at 350°F for about 60-70 mins. After 40 mins, cover with foil if it's browning too much.
05 - Let it sit in the pan for 10 mins, then move to a wire rack until totally cool. Sprinkle some icing sugar on top before you eat it.
