Effortless Walking Taco Casserole (Print Version)

# Ingredients:

01 - 2 tbsp of neutral oil like canola.
02 - 1 white onion, chopped small.
03 - 4 garlic cloves, crushed or finely minced.
04 - 1 pound ground beef (80/20 blend).
05 - 3 tbsp of taco spice blend.
06 - 1 scallion, chopped finely.
07 - 1 can of pinto beans (15 oz).
08 - 1 can of diced green chili tomatoes (10 oz).
09 - 1 cup of thick salsa.
10 - 1½ cups shredded cheddar.
11 - A 9 oz bag of corn chip Fritos.
12 - Pinch of salt and some pepper, as you like.
13 - Extras for serving: lettuce, jalapeños, scallions, sour cream.

# Instructions:

01 - Start by heating the oil. Sauté garlic and onions for 6-8 minutes, until soft and fragrant.
02 - Drop in the ground meat. Break it apart and cook for 6-8 minutes, or until browned.
03 - Mix in the taco spices, beans, and scallions. Cook for another minute or two.
04 - Add the salsa and canned tomatoes with chilies. Let it all simmer together for 8-10 minutes.
05 - Spread the mix in a 9x13 dish, sprinkle with cheese and chips, then bake at 350°F for 10 minutes.
06 - Toss on your favorite extras and serve it up warm.

01 - Check if your taco mix has salt—add some if it doesn't.
02 - You can adjust chips based on your taste.
