Taco Potatoes with Beef Toppings (Print Version)

# Ingredients:

→ Potatoes

01 - 4 to 6 medium Russet potatoes

→ Meat Filling

02 - 450 grams lean ground beef
03 - 1 packet (28 grams) taco seasoning

→ Toppings

04 - Shredded lettuce
05 - Grated cheddar cheese
06 - Sour cream
07 - Salsa
08 - Guacamole
09 - Sliced green onion

# Instructions:

01 - Preheat the oven to 200°C. Wash the potatoes thoroughly and dry them with paper towels. Prick each potato several times with a fork, then wrap each one individually in aluminium foil. Arrange on a baking tray and bake for 60 minutes. Carefully remove the tray from the oven and allow the potatoes to cool slightly.
02 - In a large skillet, cook the ground beef over medium-high heat until well browned, breaking it up with a spoon as it cooks. Drain excess fat if needed. Sprinkle the taco seasoning over the meat and add the amount of water specified on the seasoning packet. Stir well, bring to a gentle boil, then reduce heat to low and simmer for 10 minutes, stirring occasionally.
03 - Remove foil from the baked potatoes and cut a lengthwise slit on top of each. Gently press the ends to open up the center. Fill each potato generously with the seasoned ground beef. Top with shredded lettuce, grated cheddar, sour cream, salsa, guacamole, and sliced green onion as desired. Serve immediately.

# Notes:

01 - For crispier potato skins, bake potatoes without foil during the final 10 minutes.
