Thai Spicy Peanut Noodles (Print Version)

# Ingredients:

→ Noodles

01 - 8 ounces of thin rice noodles

→ Sauce

02 - 1/4 cup creamy or crunchy peanut butter
03 - 2 tablespoons soy sauce
04 - 1 tablespoon fresh lime juice
05 - 1 tablespoon natural honey
06 - 1 teaspoon hot sriracha sauce
07 - 1 tablespoon toasted sesame oil
08 - 1 garlic clove, finely chopped
09 - 1/4 cup warm water

→ Garnish

10 - 1/4 cup sliced green onions
11 - Smashed peanuts
12 - Fresh cilantro leaves (if you want)

# Instructions:

01 - Boil rice noodles following the box directions. Rinse, drain and put aside.
02 - Mix peanut butter, soy sauce, lime juice, honey, sriracha, sesame oil, garlic, and warm water together until smooth.
03 - Stir the sauce into the noodles making sure they're completely covered.
04 - Sprinkle with green onions, smashed peanuts, and cilantro if you like. Eat right away.

# Notes:

01 - Keeps in the fridge for up to 3 days
02 - When heating up again, add a splash of water or soy sauce to make it creamy
03 - Put more or less sriracha depending on how spicy you want it
