Dump the pulled chicken into a big bowl, then add the mayo, chopped celery, parsley and Lawry's seasoning. Mix everything till it's well combined.

Cut your croissants halfway through, keeping one edge intact. Tuck 2-3 lettuce leaves inside each one and spoon in some chicken mixture.

Set them out on a serving dish alongside some fresh fruit and a refreshing drink.
