Tuna Cheese Melted Wrap (Print Version)

# Ingredients:

→ Wrap Base

01 - 1 can (5 oz) chunk light or white meat tuna
02 - 2 tablespoons plain Greek yogurt
03 - 1/2 tablespoon spicy brown mustard
04 - 1 tablespoon fresh lemon squeeze (half a lemon)
05 - 1/4 cup sweet corn kernels
06 - 1/4 cup chopped red onion
07 - 1 tablespoon pickle relish or drained capers
08 - 1/2 teaspoon garlic powder
09 - 1/4 teaspoon freshly ground pepper

→ Assembly

10 - 1 large flour tortilla (10 inches minimum)
11 - 1/4 cup grated mozzarella
12 - Olive oil for pan cooking

# Instructions:

01 - Drain tuna well and put in bowl with yogurt, mustard, fresh lemon juice, corn, chopped onion, relish, garlic powder, and black pepper. Stir everything together.
02 - Heat tortilla in microwave for 10 seconds. Sprinkle cheese across middle, then spoon tuna mix on top, leaving the edges empty.
03 - Tuck both sides toward center. Fold bottom edge up over filling. Tightly roll forward to make your wrap.
04 - Pour a bit of olive oil in pan. Place wrap seam-side down and cook for 3-4 minutes each side until golden brown and warm inside.
