Set your oven to 350°F. Mix and bake the red velvet cake following box directions using two 8-inch pans.

Let cake cool all the way, then break it into fine bits. If the crumbs seem too wet, pop them in the oven at 350°F for about 5-6 minutes.

Combine cream cheese, butter and sugar, beating until light. Fold in the graham cracker bits and vanilla.

Take spoonfuls of the mix, shape into balls, and chill them for an hour. Coat your chilled balls with the cake crumbs.
