Zesty Southwest Chicken Salad (Print Version)

# Ingredients:

→ Salad Base

01 - 480 ml cooked and shredded chicken (approximately 450 g)
02 - 240 ml corn kernels
03 - 240 ml black beans, drained and rinsed
04 - 120 ml diced tomatoes
05 - 60 ml finely chopped onion
06 - 60 ml chopped fresh cilantro

→ Dressing

07 - 240 ml mayonnaise
08 - 30 ml taco seasoning
09 - 15 ml lime juice
10 - Salt to taste
11 - Freshly ground black pepper to taste

# Instructions:

01 - In a large mixing bowl, combine the shredded chicken, corn, black beans, diced tomatoes, chopped onion, and cilantro. Mix thoroughly until ingredients are evenly distributed.
02 - In a separate small bowl, whisk together the mayonnaise, taco seasoning, and lime juice until the mixture is smooth and well blended.
03 - Pour the prepared dressing over the chicken and vegetable mixture in the large bowl. Stir gently until all components are thoroughly coated.
04 - Taste and adjust seasoning with salt and freshly ground black pepper as desired. Serve immediately or refrigerate until chilled before serving.

01 - For optimal flavour, allow the mixture to chill in the refrigerator for at least 30 minutes before serving to let the ingredients meld.
