Veggie Zucchini Boats (Print Version)

# Ingredients:

→ Main

01 - 2 average-sized zucchini
02 - ½ cup reduced-fat ricotta cheese
03 - 2 cups raw spinach or ¼ cup thawed frozen spinach
04 - ½ cup chopped mushrooms
05 - 1 teaspoon finely chopped garlic
06 - Cooking spray
07 - Spices as preferred

# Instructions:

01 - Coat pan with cooking spray and brown mushrooms. Throw in garlic and spinach when almost done, cook a bit longer.
02 - Take pan off heat and mix in the soft ricotta cheese.
03 - Slice zucchini down the middle and dig out the seedy center part.
04 - Pack zucchini with your mushroom-spinach-cheese mix. Pop in oven at 350°F for 6-8 minutes.
