Coat pan with cooking spray and brown mushrooms. Throw in garlic and spinach when almost done, cook a bit longer.

Take pan off heat and mix in the soft ricotta cheese.

Slice zucchini down the middle and dig out the seedy center part.

Pack zucchini with your mushroom-spinach-cheese mix. Pop in oven at 350°F for 6-8 minutes.
