In a sturdy, big pan, mix butter, sugar, and the melted vanilla ice cream. Heat it on medium and let it come to a boil.

Turn the heat down a notch. Let it bubble and cook while stirring the whole time for about 7-10 minutes. Make sure your thermometer shows 234°F.

Take the pan off the stove. Toss in the green and white chips, stirring till they're completely melted and silky smooth.

Stir in the marshmallow spread until it’s mixed really well with the rest.

Pour everything into a square 8x8 pan. Sprinkle the shamrocks if you'd like. Leave it to cool to room temp.

Pop the candy out of the pan and cut it into roughly 24 squares.
