Vanilla Banana Brownie Layers (Print Version)

# Ingredients:

→ Pudding

01 - 1/2 cup regular milk
02 - 2 tablespoons plain flour
03 - 2 tablespoons white sugar
04 - 1 large egg yolk
05 - 1 tablespoon unsalted butter
06 - 1 tablespoon pure vanilla extract

→ Banana Batter

07 - 6 tablespoons melted unsalted butter
08 - 1/2 cup firmly packed brown sugar, any shade
09 - 1/4 cup white sugar
10 - 1/2 cup mushy overripe banana
11 - 1 large egg yolk
12 - 1 teaspoon pure vanilla extract
13 - 1 cup plain flour
14 - 1/4 teaspoon baking powder
15 - 1/2 teaspoon fine sea salt
16 - 1 cup vanilla wafer cookies, with extra for topping

# Instructions:

01 - Heat your oven to 350°F. Put parchment paper in an 8x8 pan.
02 - Mix milk, sugar, flour and egg yolk in a pot. Cook on medium-low and stir until it thickens, about 5-8 minutes. Stir in butter and vanilla at the end.
03 - Mix the melted butter and both sugars together. Add your egg yolk, mashed banana and vanilla. Gently mix in flour, baking powder and salt just until combined.
04 - Put half the batter in your pan and cover with wafers. Drop spoonfuls of leftover batter and pudding on top, then swirl them together. Sprinkle more wafers on top.
05 - Pop in the oven for 30-35 minutes. It's done when a toothpick comes out clean. Let it cool all the way before you cut it.
