Blackberry Cheese Pastry (Print Version)

# Ingredients:

01 - 4 tbsp honey
02 - 10 oz fresh or frozen blackberries
03 - 1 tsp cinnamon, ground
04 - 2 tbsp all-purpose flour
05 - 1 sheet puff pastry, defrosted
06 - 4 oz goat cheese, softened to room temp
07 - 1 egg, whisked
08 - 3 tbsp cane sugar

# Instructions:

01 - Toss blackberries, honey, flour, and cinnamon in a pot. Bring to a boil, then lower the heat to let it thicken for about 10 minutes. Let it cool completely.
02 - Set your oven to 375°F and line a rimmed baking tray with parchment paper.
03 - Stir the cooled blackberry jam and softened goat cheese until combined nicely.
04 - Spread the filling over the puff pastry, fold it in half the long way, and slice into thin strips. Twist each strip gently.
05 - Lay the twisted strips out on the prepared baking sheet. Brush them with the egg and sprinkle with cane sugar.
06 - Pop the tray in the oven for 20–25 minutes until the pastries turn golden and crispy.
