Freezer-Friendly Wraps (Print Version)

# Ingredients:

→ Main Components

01 - 1 yellow onion
02 - 1 bell pepper
03 - 8 large flour tortillas (burrito size)
04 - 8 oz cheddar cheese
05 - 2 tablespoons butter, divided
06 - 12 large eggs
07 - 1 lb cooked ham
08 - Season with a pinch of salt and pepper

# Instructions:

01 - Cube the bell pepper and onion. Check if the cheese needs grating.
02 - With 1/2 tablespoon of butter in a hot pan, soften the onion and bell pepper. Sprinkle a bit of salt and pepper. Then move to a clean bowl.
03 - Cut ham into small pieces, then heat it up in 1/2 tablespoon butter until it gets crispy edges. Set aside in a different bowl.
04 - Crack the eggs, whisk them up, and cook over medium heat in the leftover butter. Keep them moist, not fully dry, and add a dash of salt and pepper.
05 - On each tortilla, spread eggs, ham, veggies, and shredded cheese. Roll by folding up the bottom, then the sides, and roll it shut.
06 - Wrap every burrito tightly in parchment paper, tag it, and pop them into freezer-safe bags.

# Notes:

01 - You can reheat straight from the freezer or let them thaw.
02 - Best texture if defrosted in the fridge the night before.
03 - Feel free to switch up the fillings to your taste.
