Set the oven to 400°F (200°C) and line a sheet pan with parchment.

Combine the cut baby potatoes in a big bowl with 1 tbsp olive oil, 2 garlic cloves, ½ cup of Parmesan, pepper, and salt. Spread them to one side of the baking sheet.

Toss the chicken in the same bowl with the rest of the olive oil, remaining garlic, Italian herbs, paprika, and the leftover Parmesan. Place them next to the potatoes.

Bake everything for about 25-30 minutes. Make sure the chicken hits 165°F (75°C) inside, and the potatoes look crispy and golden.

Right before you eat, scatter the parsley over everything.
