Effortless Air Fryer Falafel (Print Version)

# Ingredients:

01 - 6 pita breads.
02 - 1 large shallot, roughly chopped.
03 - 2 garlic cloves, peeled.
04 - 2 teaspoons ground cumin.
05 - 1 teaspoon paprika.
06 - Cooking spray.
07 - 1/2 cup mixed fresh herbs (parsley and cilantro).
08 - Juice of 1 lemon.
09 - 1 cucumber, sliced.
10 - Lettuce leaves.
11 - 3 tablespoons all-purpose flour.
12 - Hot water, as needed.
13 - 1 cup tahini.
14 - 1 tomato, sliced.
15 - 1/2 cup Greek yogurt.
16 - 2 cans chickpeas, drained.
17 - 1/2 red onion, thinly sliced.
18 - 1 teaspoon salt.
19 - 2 tablespoons sesame seeds.
20 - 4 tablespoons olive oil.

# Instructions:

01 - Combine yogurt, tahini, and olive oil with the lemon juice in a bowl. Drizzle in small amounts of hot water until smooth to spread.
02 - In a food processor, combine drained chickpeas, fresh herbs, garlic, shallot, flour, lemon juice, sesame seeds, spices, and salt. Blend into a thick paste.
03 - Roll the mixture into little discs about an inch wide. This usually makes 25 to 30 pieces.
04 - Give the air fryer basket a light coat of oil spray. Arrange falafel discs without overlapping, cook for 8 minutes at 350°F, flip, then cook another 6 minutes.
05 - Microwave the pita bread for about 15 seconds to warm it up. Put the falafel discs, sauce, and your favorite veggies inside.

# Notes:

01 - For frying in oil, shape into balls and drop into 350°F oil for 4 minutes until browned.
02 - For stovetop frying, use about an inch of oil in a cast iron skillet. Fry each side of the falafel discs on medium-high for 3-4 minutes.
