Combine yogurt, tahini, and olive oil with the lemon juice in a bowl. Drizzle in small amounts of hot water until smooth to spread.

In a food processor, combine drained chickpeas, fresh herbs, garlic, shallot, flour, lemon juice, sesame seeds, spices, and salt. Blend into a thick paste.

Roll the mixture into little discs about an inch wide. This usually makes 25 to 30 pieces.

Give the air fryer basket a light coat of oil spray. Arrange falafel discs without overlapping, cook for 8 minutes at 350°F, flip, then cook another 6 minutes.

Microwave the pita bread for about 15 seconds to warm it up. Put the falafel discs, sauce, and your favorite veggies inside.
