Crispy Cheese Pan Melts (Print Version)

# Ingredients:

01 - 8 thick slices of white or sourdough bread.
02 - 1/2 cup of softened unsalted butter.
03 - 4 ounces grated Gruyère cheese.
04 - 8 ounces of sharp cheddar, grated.
05 - 1/4 cup Parmesan cheese, grated (optional).

# Instructions:

01 - Preheat your oven to 400°F and cover a baking sheet with parchment paper.
02 - Take bread slices and coat one side of each with a layer of butter.
03 - If you'd like, sprinkle Parmesan over the buttered sides and press it in gently.
04 - Lay 4 slices butter-side down, pile cheeses on top, and cap with the remaining bread butter-side up.
05 - Start baking on the bottom oven rack for 4-5 minutes, then flip them over and cook another 2-3 minutes until toasty.
06 - Let them cool slightly before slicing and dishing out.

# Notes:

01 - Baking on the lower rack helps with even browning.
02 - Spread butter all the way to the edges of the bread.
03 - Allow sandwiches to rest a moment before you cut them.
