Heat your oven to 425°F. Put parchment paper on a big 15x21 baking tray (or grab two smaller trays instead).

Take the skin off your sweet potatoes and dice them into ½-inch chunks. If they roll around, slice a bit off the bottom so they stay put. First cut them into ½-inch slices, then chop those into cubes.

Dump the cubes onto your baking sheet and mix them with the oil, maple syrup, and all your spices until they're coated.

Lay the potatoes out flat with space between each piece so they don't crowd each other.

Bake at 425°F for about 25-35 minutes, making sure to flip the sweet potatoes around at the 15-minute mark.
