Eggs With Herbed Yogurt (Print Version)

# Ingredients:

→ Core

01 - 1 cup thick strained yogurt from Turkey or Greece
02 - 2 fresh eggs
03 - 2 ounces (55g) unsalted butter

→ Flavorings & Spices

04 - Generous handful of dill sprigs
05 - Bunch of mint leaves
06 - ½ small garlic clove
07 - 1 teaspoon red pepper flakes
08 - ½ teaspoon smoky paprika
09 - Salt and black pepper as needed

→ For Eggs

10 - 1 tablespoon white vinegar

# Instructions:

01 - Chop the herbs finely and grate the garlic. Stir them into the yogurt and add salt and pepper to your liking.
02 - Add vinegar to boiling water. Swirl water to create a whirlpool and drop the egg in the middle. Let it cook for 3 minutes if you want a runny center.
03 - Heat butter until it melts, then mix in the pepper flakes and paprika. Stir everything together.
04 - Layer the herby yogurt on your plate, place eggs on top, and pour the warm butter mixture over everything. Top with extra herbs and some black pepper.

# Notes:

01 - Newer eggs work better for poaching
02 - Try regular paprika for a gentler flavor
03 - Go easy on the garlic at first - you can always add more
