Easy Indian Chicken Curry (Print Version)

# Ingredients:

01 - 1 teaspoon paprika.
02 - 1 bay leaf.
03 - ½ teaspoon granulated sugar.
04 - 2 chicken breasts, cut into small chunks, no skin or bones.
05 - 3 tablespoons curry powder.
06 - 3 tablespoons olive oil.
07 - ½ teaspoon cayenne pepper.
08 - ½ lemon, squeezed for juice.
09 - ¾ cup coconut milk.
10 - Salt as needed.
11 - ½ teaspoon grated ginger.
12 - 1 small onion, diced.
13 - 1 teaspoon ground cinnamon.
14 - 2 cloves garlic, finely chopped.
15 - 1 tablespoon tomato paste.
16 - 1 cup plain yogurt.

# Instructions:

01 - Warm up oil and sauté onions till golden. Toss in garlic, ginger, curry powder, cinnamon, paprika, bay leaf, and a sprinkle of salt. Let it cook for a couple of minutes.
02 - Mix chicken pieces, tomato paste, yogurt, and coconut milk into the pan. Once it boils, let it simmer gently for 20 to 25 minutes.
03 - Take out the bay leaf. Pour in lemon juice and sprinkle cayenne. Cook softly for 5 more minutes.
