Italian Pastina Comfort (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 cups chicken broth (preferably bone broth)
02 - 1 clove garlic, finely chopped
03 - ½ cup diced carrot
04 - ½ cup diced celery
05 - ½ cup chopped onion
06 - 1 cup orzo or pastina
07 - 4 tbsp butter, split

→ Seasonings & Finishing

08 - ¼ tsp ground turmeric
09 - ¼ tsp freshly cracked black pepper
10 - ¼ tsp kosher salt
11 - ½ cup shredded parmesan cheese
12 - 1 egg, beaten thoroughly (if you'd like)

# Instructions:

01 - Melt 2 tbsp of butter and cook the celery, carrot, and onion until soft. Toss in garlic and stir for 2-3 minutes until it smells amazing.
02 - Pour in broth, pepper, turmeric, and salt. Heat until simmering, stir in the pasta, and cook to your preferred tenderness.
03 - Turn off the heat, then mix in parmesan cheese and the rest of the butter.
04 - Let the soup cool for about 5 minutes. Slowly drizzle in whisked egg while stirring constantly, if using.
