Love Day Cheesecake Pie (Print Version)

# Ingredients:

→ Crust Base

01 - 1 1/2 cups (180g) crushed graham crackers (12 whole sheets)
02 - 1/4 cup (50g) white sugar
03 - 6 tablespoons (85g) melted unsalted butter

→ Creamy Center

04 - 16 ounces (452g) softened full-fat cream cheese
05 - 1/2 cup (100g) white sugar
06 - 1/4 cup (60g) softened full-fat sour cream
07 - 1 teaspoon vanilla extract
08 - 1 teaspoon squeezed lemon juice
09 - 2 large eggs, at room temp

→ Topping Ideas

10 - Raspberry sauce
11 - Handful of fresh raspberries
12 - Fluffy whipped cream

# Instructions:

01 - Heat oven to 350°F. Combine crushed crackers, sugar and melted butter. Spread into your 9-inch pie dish but don't pack too firmly.
02 - Pop the crust in the oven for 10 minutes while you get the filling ready.
03 - Mix the cream cheese with sugar until it's creamy. Blend in sour cream, vanilla and lemon juice. Gently mix in eggs one by one just until combined.
04 - Turn oven down to 325°F. Pour your mixture into the warm crust. Bake about 35 minutes until nearly set, covering loosely with foil if needed.
05 - Let it sit out for an hour, then stick it in the fridge for at least 2 hours before you dig in.
06 - Top with your favorite extras right before you serve it. Keep any leftovers in the fridge.
