Parmesan Chicken Nuggets (Print Version)

# Ingredients:

→ Coating

01 - 1 pinch of Italian seasoning, dried
02 - 1/3 cup of Parmesan, finely grated
03 - 2 tablespoons fresh parsley, minced
04 - 1/2 cup of melted butter
05 - 1 teaspoon of garlic, finely minced
06 - 1 cup breadcrumbs, dried
07 - 1/4 teaspoon of garlic salt
08 - 1/8 teaspoon of ground black pepper
09 - 1/4 teaspoon sea salt

→ Main Ingredient

10 - 2 pounds of chicken breasts or thighs, without skin or bones, chopped into pieces about 1-2 inches

# Instructions:

01 - Set your oven to 450°F and adjust the rack to sit in the middle.
02 - Use paper towels to dry the chicken thoroughly so the coating crisps up nicely.
03 - In one bowl, stir the minced garlic into the melted butter. In a separate bowl, mix together breadcrumbs, Parmesan, all the seasonings, and parsley.
04 - Dip each piece of chicken first into the garlic butter, then press it into the breadcrumb mixture to coat evenly.
05 - Lay the chicken pieces on a roasting pan, leaving space in between. Pour any leftover butter over them. Bake at 450°F for 15 minutes or until the inside hits 165°F.

# Notes:

01 - Using a dark pan might make the bottoms brown more.
02 - Chicken tends to brown more on the bottom than on top.
03 - Reheat solidified butter if cold chicken makes it harden.
