Simple Beef Burritos (Print Version)

# Ingredients:

01 - 3 cups plain cooked rice
02 - 1 lb ground beef (lean)
03 - 6 large tortilla wraps (10 inches)
04 - 3/4 cup sweet corn kernels
05 - 1 ½ cups shredded cheddar cheese
06 - 1 (1-ounce) packet of taco spice mix
07 - 1 ½ cups beans (black or refried)

→ Optional Toppings

08 - Sour cream
09 - Chopped red onions
10 - Avocados or a scoop of guacamole
11 - Fresh cilantro leaves
12 - Diced tomatoes or your favorite salsa
13 - Shreds of lettuce

# Instructions:

01 - Turn the oven on to 350°F and lightly coat a 9x13-inch pan with cooking spray.
02 - Brown the beef in a pan, then stir in the taco spice mix and cook it up as directed on the packet.
03 - In the middle of each tortilla, layer 1/4 cup beans, 1/2 cup rice, cooked beef, 2 tablespoons of corn, and 1/4 cup shredded cheese.
04 - Fold up the sides, roll tightly, and place each burrito seam-side down in your pan.
05 - Cover the dish with foil and pop it in the oven for 25 minutes to warm through—or a bit longer (30-35 minutes) if they’re chilled.
