Warm olive oil in big skillet over medium heat. Brown the chicken chunks until golden. Take them out and put aside.

Using the same pan, cook onion, garlic, and bell pepper until they're soft.

Toss pineapple chunks into the pan and let them cook for 2 minutes.

Add rice, broth, soy sauce, ginger, salt, and pepper. Let it bubble up, then lower heat, put the lid on, and cook for 18-20 minutes till rice gets fluffy.

Put the chicken back in the pan and stir everything together so flavors mix well. Let it warm through.
