Sweet Tangy Chicken Rice (Print Version)

# Ingredients:

01 - 1 pound diced chicken breast
02 - 1 cup diced pineapple chunks
03 - 1 tablespoon olive oil
04 - 1 onion, diced
05 - 2 cloves garlic, crushed
06 - 1 red bell pepper, chopped
07 - 1 cup jasmine rice
08 - 2 cups chicken broth
09 - 1 tablespoon soy sauce
10 - 1 teaspoon fresh grated ginger
11 - Salt and pepper as needed

12 - ¼ cup chopped green onions
13 - 1 tablespoon toasted sesame seeds

# Instructions:

01 - Warm olive oil in big skillet over medium heat. Brown the chicken chunks until golden. Take them out and put aside.
02 - Using the same pan, cook onion, garlic, and bell pepper until they're soft.
03 - Toss pineapple chunks into the pan and let them cook for 2 minutes.
04 - Add rice, broth, soy sauce, ginger, salt, and pepper. Let it bubble up, then lower heat, put the lid on, and cook for 18-20 minutes till rice gets fluffy.
05 - Put the chicken back in the pan and stir everything together so flavors mix well. Let it warm through.
06 - Sprinkle green onions and sesame seeds on top before you dish it up.

01 - Works with canned or fresh pineapple chunks
02 - Add more or less soy sauce depending how salty you want it
