Preheat oven to 175°C. Coat a 33x23 cm baking dish with nonstick cooking spray.

In a large skillet over medium-high heat, brown ground beef until nearly cooked through. Add the chopped onion and continue cooking until softened and the beef is no longer pink.

Add taco seasoning and water to the skillet. Stir to combine and bring to a boil.

Reduce heat to medium-low. Stir in the drained black beans, diced tomatoes with green chiles, and sour cream. Cook, stirring occasionally, for 8–10 minutes, until heated through and mixture thickens slightly.

Place a single layer of corn chips at the bottom of the prepared baking dish. Sprinkle 100 grams shredded cheese over the chips. Evenly spread the beef mixture on top, then sprinkle with the remaining cheese.

Cover the dish with foil and bake for 15 minutes. Remove foil and continue baking 5 minutes until cheese is melted and edges are bubbling.

Remove from oven and top with additional corn chips and your choice of green onions, sour cream, guacamole, salsa and jalapenos before serving.
