Walking Taco Casserole Bake (Print Version)

# Ingredients:

01 - 450 grams ground beef
02 - 1 small onion, finely chopped
03 - 1 packet taco seasoning mix
04 - 120 millilitres water
05 - 425 grams black beans, drained and rinsed
06 - 285 grams diced tomatoes with green chiles
07 - 120 grams sour cream
08 - 260 grams corn chips
09 - 200 grams Mexican-style shredded cheese

10 - Green onions, sliced
11 - Sour cream
12 - Guacamole
13 - Salsa
14 - Jalapenos, sliced

# Instructions:

01 - Preheat oven to 175°C. Coat a 33x23 cm baking dish with nonstick cooking spray.
02 - In a large skillet over medium-high heat, brown ground beef until nearly cooked through. Add the chopped onion and continue cooking until softened and the beef is no longer pink.
03 - Add taco seasoning and water to the skillet. Stir to combine and bring to a boil.
04 - Reduce heat to medium-low. Stir in the drained black beans, diced tomatoes with green chiles, and sour cream. Cook, stirring occasionally, for 8–10 minutes, until heated through and mixture thickens slightly.
05 - Place a single layer of corn chips at the bottom of the prepared baking dish. Sprinkle 100 grams shredded cheese over the chips. Evenly spread the beef mixture on top, then sprinkle with the remaining cheese.
06 - Cover the dish with foil and bake for 15 minutes. Remove foil and continue baking 5 minutes until cheese is melted and edges are bubbling.
07 - Remove from oven and top with additional corn chips and your choice of green onions, sour cream, guacamole, salsa and jalapenos before serving.

# Notes:

01 - For a spicier flavour, add fresh diced jalapenos or extra hot salsa to the toppings.
